Baking is fun, and who doesn’t love cake? But it can be time consuming. If you want to throw a quick and tasty dessert together mid-week, without having to put the oven on and start weighing, measuring, and mixing, a no-bake dessert is ideal. Here are four of our favourite no-bake desserts that are simple and tasty to whip up when your sweet tooth kicks in...
- Eton Mess: This summer favourite can be whipped up (literally) in ten minutes. To serve four people you’ll need 500g of chopped strawberries, 400ml double cream, and three crushed meringue nests. Puree half of the strawberries in a blender; whip the cream until stiff peaks form. Fold the pureed strawberries, cream, and meringue together, then fold in the chopped strawberries and spoon the mixture into four chilled glasses to serve.
- Banana ice cream: If you’ve got some overripe bananas and you’re unsure what to do with them, this banana ice cream recipe is great. Peel your bananas and pop them in the freezer to harden for a few hours. Remove the frozen bananas and let them sit for about five to ten minutes to soften, then put them in a blender and blitz to a smooth consistency. It’s sweet enough on its own; but you could add cinnamon, honey, or nut butter to enhance the flavour.
- Sautéed peaches: To serve four people you’ll need four large ripe peaches, remove the stones and cut each one into eight wedges. You’ll also need two tablespoons of unsalted butter, and two tablespoons of sugar. Melt the butter in a large skillet pan over a medium heat, then stir in the sugar. Add the peaches and cook for two to five minutes until the sugar has dissolved. Serve immediately with vanilla ice cream.
- Tropical sorbet: This light, summery dessert can be put together in about 15 minutes. You’ll need about two and half cups of frozen mango chunks, one cup of frozen pineapple chunks, about 170g of low fat lemon yoghurt, and a teaspoon of grated lime rind. Let the frozen fruit stand at room temperature for about ten minutes before blending everything together until smooth. Serve right away or pop it back in the freezer to firm up further.
